I always love this time of year, don’t you? The beautiful decorations, twinkly lights, time with family and friends and of course, delicious food like these Pumpkin Spice Muffins! I am forever grateful that I have family living near me to celebrate with. While we do often share meals together, the delicious treats we make during Thanksgiving and Christmas are my favorites. Because I love sharing my favorite things with you, I’m sharing our favorite Pumpkin Spice Muffin Recipe!
Seriously, these Pumpkin Spice Muffins are so good! My sister in law showed up at a Thanksgiving meal a few years ago with these and they were a huge hit. I immediately asked her for the recipe and they have become a staple in our home around this time of year. Honestly, they are good anytime of year! The thing that makes them so good is they have just enough pumpkin flavor to make them feel like a festive treat, but not too pumpkin-y, ya know? I know you aren’t supposed to say this, but I’m just not a huge pumpkin flavor person so these are just right.
I also prefer to make them as mini muffins to be just the right sized treat (and then I don’t feel so bad if I eat 2 or 3). My sister in law sometimes drizzles cream cheese on top, but I prefer them without. You can also replace the butterscotch morsels with chocolate chip morsels, but I haven’t tried it myself yet. However, I don’t think you can ever go wrong with chocolate anything. Yum.
Bonus! My little girl, Sevi, who loves to bake, can make these Pumpkin Spice Muffins on her own with only a little help from me. I just have to make sure she isn’t constantly licking the spoons when we plan to share them outside the home. 😉 Isn’t this little kid’s ice cream apron so cute?
