Meatloaf, but Better.

My family really enjoys homemade Meatloaf. I know some people don’t love it {but they must be crazy}. We don’t have it all the time, but we’ve had it enough that I have perfected the below recipe. Now, my mother-in-law is the one who taught me how to make it, but I have come to use an adapted version of how I was taught by her. {SHHH, Don’t tell her, but it’s better.}

Homemade Meat Loaf Recipe

  • 1.5 lbs of ground beef
  • 1 pack of Lipton Onion Soup Mix
  • 1 egg
  • 1 8 oz can of tomato sauce
  • 4-6oz of barbecue sauce (this is the secret to a yummy meatloaf)
  • 1 chopped Bell Pepper (whatever color your heart desires.) This item is optional, but it adds a great flavor.
  • 1 pack of crushed saltines (you can use Ritz crackers here or even well toasted bread if you don’t have any crackers on hand.)
  • Ketchup to taste

First get out a medium sized mixing bowl. Then throw in all the ingredients and mix together. You can use a spoon, mixer or your hands. I usually like to mix everything together, but the crackers. Th crackers help the mix be the correct consistency, so it’s easier to add them in slowly at the end. Once you have enough crackers in so that the meatloaf is not soupy. Place the mixture into a 5×9 baking dish and cook on 375 degrees for 45 minutes.

When it’s about five minutes from being finished, I take the meatloaf out and pour off the grease if needed. I then add ketchup to the top (as much or as little as you like) and cook for the remaining five minutes.

TA-DAAAA, best meatloaf of your life, Ma. Make some taters, pintos and spicy cornbread… SLAP YO DANG GRANNY.

    I was out of Lipton Onion soup mix, but I found a copycat recipe on All Recipes. I use that now so it’s not filled with all the junk. I use your recipe all the time!
