Meatloaf, but better.

This recipe is an adapted version of how I was taught by my mother-in-law. Don’t tell her, but its better.

  • 1.5 lbs of ground beef
  • 1 pack of Lipton Onion Soup Mix
  • 1 egg
  • 1 8 oz can of tomato sauce
  • 4-6oz of barbecue sauce (this is the secret to a yummy meatloaf)
  • 1 chopped bell pepper (whatever color your heart desires) This can be optional, but it adds a great flavor.
  • 1 pack of crushed saltines (you can use Ritz crackers here or even well toasted bread if you don’t have any crackers on hand.)
  • ketchup

Now, all you need to do is get out a medium sized mixing bowl, throw in all the ingredients and mix it together. I like to mix everything but the crackers and then mix those in last. Add in enough crackers so that the meatloaf is not soupy. Put into a 5×9 baking dish and cook on 375 degrees for 45 minutes.

When its about 5 minutes from being finished, I take it out and pour off the grease if needed. I add ketchup to the top (as much or as little as you like) and cook for the remaining 5 minutes.

TA-DAAAA, best meatloaf of your life, Ma. Make some taters, pintos and spicy cornbread… SLAP YO DANG GRANNY.

Let me know what you think if you try this.

I was out of Lipton Onion soup mix, but I found a copycat recipe on All Recipes. I use that now so it’s not filled with all the junk. I use your recipe all the time!
