Easy Chicken Salad

My sweet Nanny taught me to make this easy chicken salad years ago. I’ve never tried it any other way because, “if it ain’t broke, don’t fix it.” Also, many folks imagine me with a house nanny when I say “my Nanny.” She’s my Grandma on my Mom’s side. Anyone else call their Grandma, Nanny?

Sweet Nanny uses a food processor to grind up all her ingredients. So, you’ll need a food processor. I have had this cheap one from walmart for many years and it has served us well.

Recipe for Easy Chicken Salad

Now, this recipe is all to taste (Nanny knows best). I will give approximate measurements, but use this “recipe” as more of a guideline.

To make this simple recipe even easier, I put my chicken in the crockpot in the morning (on high for about 2 hours) and its ready to whip up by lunch. You will need the following:

  • 1-1.5 lbs of Chicken cooked in crockpot with 1/4 cup of water. I season with garlic and onion powder.
  • 7-8 stalks of chopped celery
  • 1 cup of chopped pecans or walnuts
  • 1-1.5 cups of mayonnaise. I use Dukes, duh.
  • 2-3 oz of raisins (I love to chop up grapes too. Mark prefers raisins over grapes. So, I almost always use raisins.)

I put each of these in the food processor one by one with the exceptions of the raisins.

I use a Tupperware Bowl to mix because we always have extra and I can store it in the same bowl I mix it in. I’m all about what’s easiest! After you’ve got all your ingredients in a bowl, add the mayonnaise and mix it together until well combined.

We also like to serve this easy chicken salad with croissants. Yum!

    Sounds so good! Yes, i called my grandma on my moms side Nanny. Being the oldest grandchild, everyone after me called her that too. I miss her so much! 😔 She passed away Sept 2009. And not a day goes by she doesnt cross my thoughts. We had such a unique, tight bond. (Ok, gotta quit, “tears”)

    What chicken pieces do you use? Do you use bone-in pieces?

      You can buy a rotisserie chicken to make it faster. I usually just throw some boneless chicken in the crockpot in the morning and its done by lunch. In time to make it into chicken salad.

    I make a similar one using onions, grapes, no nuts or raisins and I add a ton of curry. It’s delicious!
