My family and I love Chicken Pot Pie! It’s not only easy, there is something about it that is so comforting. To keep it simple at dinner time, I place the raw chicken in the crockpot for 4-6 hours on low in the morning. I cook one pound of chicken breast in 1/4 cup of water to keep it from drying out. The below recipe will make one deep dish pie or will make filling for two if your pie dish is shallow. {If you love this recipe, you may enjoy my homemade bread recipe too!}

Chicken Pot Pie Recipe

  • 1 cup of diced carrots
  • 1 cup of diced onion
  • 1 cup of diced celery
  • 1/3 cup of butter
  • 1 tablespoon minced garlic
  • 1/2 cup of all purpose flour
  • 2 cups of chicken broth
  • 1 cup of milk
  • Peas or mixed veggies work just as well!
  • 1 lb of chicken breast (cooked and shredded)
  • 2 ready-to-bake pie crusts

How to Make Chicken Pot Pie

Dice and sauté the carrots, onion and celery in the butter and garlic for a few minutes. Once they are softened, add in 1/2 cup of all purpose flour and mix until well incorporated.

Then slowly add in the chicken broth and milk. Simmer until thick and bubbly.

After simmering, add in your shredded chicken and peas.

Salt and pepper to taste.

Pour it in your crust, Betty Crocker!

One day, I’ll make my own crust. But to keep it easy, we use store bought and live our best lives.

While the oven is preheating, I like to have fun and decorate my pie crust. You can skip this step if you want, but the fam will love it. I just use cookie cutters or a sharp knife and get creative.

Cover the bottom of your pie dish with the first crust. Pour in your mixture and cover with the second pie crust.

After the mixture has been added to the crust, but before baking.

You can tuck in your excess crust (if you have any) or just cut it off with your kitchen shears. Use a fork to go around the edge of your pie crust to seal the two crusts together.
